The smell that fills the neighborhood or floats across the field or lake telling you that someone is grilling. I have been a bbqer for forty years. I do not consider myself a great cook but i get the job done. I have learned over the years that most of us go through these phases.
1.How many spices,rubs,sauces and secret ingredients can I possible add to one steak.
2. How hot can I get the grill for searing that piece of meat
3. how many pieces of chicken can i do at one time
The list goes on and on.
After time you begin to realize that less is sometimes better. This is not to say that heavy rubs and spicy sauces do no have their place. I however have found that sea salt and good pepper can make almost any steak come alive with flavor.
